Ingredients

  • One bottle (750 ml) of Beringer Mountain Rosé
  • 4 cups fresh watermelon juice (from about 1/2 a large watermelon)
  • 1 medium jalapeño, seeds and membranes removed, thinly sliced
  • 1 cup fresh lime juice (from about 8-10 limes)
  • 1/2 cup simple syrup (or to taste)
  • 2 cups sparkling water or club soda
  • Lime slices and watermelon slices, for garnish
  • Fresh mint leaves, for garnish
  • Ice cubes

Instructions

  1. Cut the watermelon into chunks, removing the rind. Puree in a blender until smooth, then strain the puree through a fine mesh sieve to get the juice. You should end up with about 4 cups of juice.
  2. In a large pitcher, combine the sliced jalapeño with the fresh lime juice. Let it sit for about 10 minutes to allow the lime juice to take on some of the jalapeño's heat.
  3. To the pitcher, add the watermelon juice, Beringer Mountain Rosé, and simple syrup. Stir well to combine. Taste and add more simple syrup if desired.
  4. Refrigerate the sangria for at least 1 hour, or up to 24 hours to allow the flavors to meld.
  5. Just before serving, add the sparkling water to the pitcher and stir gently. Serve the sangria over ice, garnished with lime slices, jalapeño slices, watermelon slices, and fresh mint leaves.
