Ingredients

For the salad

  • 6 cups mixed salad greens (such as arugula, spinach, and butter lettuce)
  • 1 ripe mango, peeled, pitted, and diced
  • 1 ripe avocado, peeled, pitted, and diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup toasted sliced almonds
  • 1/4 cup crumbled feta cheese
  • 1 tablespoon chopped fresh cilantro or mint (optional, for garnish)

For the citrus vinaigrette

  • 1/4 cup fresh orange juice
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1/4 cup extra virgin olive oil
  • Salt and black pepper to taste

Instructions

  1. In a small bowl, whisk together the fresh orange juice, fresh lemon juice, honey, and Dijon mustard until well combined.
  2. Gradually whisk in the extra virgin olive oil until the vinaigrette is emulsified. Season with salt and black pepper to taste. Set aside.
  3. In a large salad bowl, combine the mixed salad greens, diced mango, diced avocado, thinly sliced red onion, toasted sliced almonds, and crumbled feta cheese.
  4. Drizzle the citrus vinaigrette over the salad and toss gently to coat all the ingredients evenly.
  5. Transfer the salad to serving plates or a large platter. Garnish with chopped fresh cilantro or mint, if desired.
